Raw Cacao Cookies

These dairy free, gluten free, vegan cookies are quick to make and provide a nice amount of protein and fiber. Don’t eat more than two at a time to keep blood sugar and pH balance on track!

 

Prep:

Soak 1 cup of pecans or almonds or sunflower seeds for 4 hours

Soak 8 to 10 dates for 1 to 4 hours

 

Ingredients:

1 cup of soaked pecans or almonds

8 to 10 soaked dates

2 cups of walnuts

1/2 cup cacao nibs

1. Drain the soaked pecans/almonds and dates.

2. Blend all ingredients except cacao nibs in a food processor.

3. Stir in cacao nibs.

4. Take a tablespoon of mixture and roll into a small ball. Flatten to make more cookie like! Refrigerate. These will keep well for a long time.

 

Variation: Add 2 teaspoons vanilla extract, a pinch of sea salt, 1/2 cup grated coconut, 1 tablespoon cinnamon, or 1/4 teaspoon nutmeg.
